Fathead Pizza Crust

  • 1 1/2 cups part-skim shredded mozzarella cheese (be sure to use shredded cheese)

  • 2 ounce full-fat cream cheese 

  • 3/4 cup finely ground almond flour

  • 1/4 tsp salt

  • season crust to your liking - I like garlic powder added to taste in mine

  • 1 large egg beaten


Put cheeses together in a bowl and microwave 30 seconds at a time, stirring each 30 seconds, until smoothly blended. (My microwave takes a full 2 minutes to get it nice and smooth, but each microwave varies a bit - so check after each 30 second interval to see it it is nice and smooth after stirring.)


Next add your almond flour and garlic salt and knead it well with your hands until completely mixed together. If your dough gets hard to mix you can microwave for a few more seconds


Take your 1 egg and whip it well in a bowl. Then test the temperature of your pizza dough, ensuring it isn't hot at all to the touch (you don't want your egg cooking because of hot dough - you want your egg to blend into your dough as you knead it into the dough) Keep kneading until egg is completely mixed into dough. Do not re-microwave dough once you have added egg.


Then put your dough on well oil sprayed parchment paper, place another sheet of wax paper on top of dough (spray your wax paper with oil before applying to dough) and roll it out to the thinnest you want your pizza to be. Peel top sheet of wax paper and the transfer dough gently to your well oiled pizza pan.


Bake at 350 degrees for 7-10 minutes until browned a bit


Take out of oven, add your sauce and topping and put back into oven until all toppings are cooked to your liking - I did an additional 8 minutes for my pizza
