Low Carb Ham & Cheese Pinwheels LC

These yummy treats are low carb using the fathead dough. A real kids crowd pleaser! (That includes big kids too!)



Ingredients:


Fathead dough:

  • 1 3/4 cups shredded mozzarella

  • 3/4 cups superfine almond flour

  • 2 tbsp cream cheese

  • 1 egg

  • 1/2 tsp. salt

  • 1/2 tsp onion powder

  • 1/2 tsp garlic salt

4-6 slices of ham

4 tbsp. cream cheese

1/2 cup shredded cheddar cheese

2 tbsp. butter, melted

dash of garlic salt


Instructions


  1. Mix the shredded cheese and almond flour in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.

  2. Stir, then microwave on HIGH for another 30 seconds.

  3. in a separate bowl mix the egg, salt, onion powder and garlic salt. Then fold and knead egg mixture into the warm dough mix.

  4. Place in between 2 pieces of parchment paper and roll into a squarish shape. Remove the top baking paper/parchment.

  5. Make fork holes all over the pizza base to ensure it cooks evenly.

  6. Warm 4 tbsp. of cream cheese in microwave for 20 seconds, it will be very soft, stir and spread on dough.

  7. Layer cream cheese with 1/2 cup of cheddar cheese and ham slices. Now roll dough into a log and cut 1/2 to 1 inch thick "pinwheels"

  8. Place on greased cookie sheet and bake for 15 - 20 minutes until light golden brown.

  9. Brush with butter and garlic salt mixture and bake for an additional 5 minutes.

You may need a double batch of these, they go that fast! Enjoy!
