Shrimp Avocado Appetizer

Share a taste-bud popping delight with your guest and serve them this appetizer they will be asking for more of! Low carb, keto and a crowd pleaser.

Ingredients:
1 lb of shrimp, peeled & deveined
2 large English Cucumbers, chopped into rounds
2 Tbsp. olive oil
4 garlic cloves, minced
1 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. red pepper
1/2 tsp sea salt
chopped parsley or cilantro for garnish
Homemade Guacamole:
2 avocados
Juice from 1 lime
2 garlic cloves, minced
sea salt & pepper to taste
Instructions:
Saute minced garlic in large pan, (I prefer cast iron skillet) adding shrimp and then season it all with chili powder, cumin, red pepper, and salt. Combine well and saute until shrimp are fully cooked and browned on both sides.
Place cucumber rounds on serving dish and sprinkle with sea salt.
Mash and mix avocado, lime juice, minced garlic cloves and salt & pepper. Place a spoonful of guacamole onto each slice of cucumber, then place a cooked shrimp on top.
Top each appetizer with a squeeze of more lime juice (keeps them fresh looking longer AND gives them a nice bite) then sprinkle each one with cilantro or parsley.
Serve right away, or can keep in refrigerator for a couple of hours
