Vegetarian & Low Carb Slaw with a Twist

Not your average slaw, try this rosemary and garlic seasoned slaw made with tahini for a healthy twist.


Ingredients:

1 & 1/2 cups of green cabbage (shredded)

1 & 1/2 cups of purple cabbage (shredded)

2 stalks of celery, diced

1/2 cup of parsley

1/2 cup of cilantro

1 carrot, shredded

1 small beet, shredded

5 cloves garlic, minced

2 Tbsp. rosemary, minced

3/4 cup of tahini

1/2 cup of lemon juice

5 Tbsp. apple cider vinegar

4 Tbsp. coconut aminos

1/4 cup of water

Pinch of sea salt


Mix the grated cabbages, celery, parsley, cilantro, carrot, beet, garlic and rosemary well. Once it is all mixed sprinkle with the sea salt and toss thoroughly.


In a separate bowl, mix lemon juice, apple cider vinegar and tahini and mix with a blender. Pour over slaw mixture and thoroughly mix.
