Low Carb Cheesy Chicken Fritters

Your kids are going to love these! (Even the BIG kids!)

Ingredients:
Olive Oil for sauteing
1 lb cooked chicken meat (can be canned or fresh cooked)
3 eggs
1/2 cup low carb mayo
1/3 cup almond flour
1 cup shredded cheese (montery jack is my favorite!)
1 tsp. rosemary
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. coarse black pepper
Instructions:
Mix shredded chicken with all other ingredients, it really helps firm it up and make it easier to work with if you refrigerate it for a couple hours before forming fritters.
Heat a large skillet (I prefer cast iron) cover bottom with 1/2 inch of olive oil and heat up. Place a large spoonful at a time, spacing spoonfuls by 1/2 inch or so for cooking room. Flatten to form fritters in a thin layer (you don't want them to be too thick so they will cook all the way through) AND you can make even smaller ones for little tykes to eat. Cook to a golden brown and then flip to brown other side.
Serve while hot! Yum.
