Low Carb Cheesy Chicken Fritters

Your kids are going to love these! (Even the BIG kids!)

Ingredients:
Avocado Oil for sauteing
1 lb cooked chicken meat
3 eggs
1/2 cup low carb mayo
1/3 cup almond flour
1 cup shredded cheese (Monterey jack is my favorite!)
1 tsp. rosemary
1/2 tsp. garlic powder
1/2 tsp. salt
black pepper to taste
Instructions:
Mix shredded chicken with all other ingredients, if you refrigerate it for a couple hours before forming fritters it helps firm it up.
Heat a large skillet (I prefer cast iron) cover bottom with 1/2 inch of avocado oil and heat up. Place a large spoonful at a time, spacing spoonfuls by 1/2 inch or so for cooking room. Flatten to form fritters in a thin layer so they cook through AND you can make even smaller ones for little tykes to eat. Cook to a golden brown and then flip to brown other side.
Serve while hot! Enjoy!
