Low Carb Momma's Chocolate Cake

For all the chocolate cake lovers out there! And anyone else looking for a low carb alternative that is just as good as the real thing! This recipe is a big hit for any occasion.



Ingredients:

1 & ½ cups of almond flour

1 cup of cocoa powder (use a good quality cocoa)

¼ cup of coconut flour

3 tsp. baking soda

1 tsp. baking powder

1 tsp. salt

½ cup of butter, melted

4 eggs

3 tsp. vanilla

½ cup hot water

½ cup of strong coffee or espresso, already brewed


Directions:

· Preheat oven to 325 degrees.

· In a large bowl, stir together flour, sugar, cocoa, baking soda, baking powder, and salt. I like to use the mixer to really blend well or if you have a flour sifter, sift all dry ingredients together for a fine mix.

· In another mixing bowl, mix cooled melted butter with eggs and vanilla. Add to dry ingredients and mix well. Next pour in hot water and expresso/coffee and blend well.

· Spray two 9-inch cake pans with non-stick coconut oil cooking spray.

Bake for 20 minutes or until cake is pulling away from sides and toothpick comes out clean. Note that time could vary as all ovens heat differently.

Let cool before frosting.



The Frosting


Ingredients:

1 cup butter, softened

4 ozs. Cream cheese, softened

1 cup cocoa

2 cups alternative sugar free powdered sugar

3 tsp. vanilla

½ cup heavy cream


Directions:

Cream butter and cream cheese together until smooth and no lumps slowly add cocoa and sugar until mixed well. Finally mix vanilla and heavy cream in one measuring cup and then slowly add to your frosting mix until smooth. Frost cake…enjoy.
